Tonight was a very enjoyable dinner. We decided to move the operation outside for a change of scenery and everyone was very appreciative of this decision. It was a beautiful evening out with a little bit of sun still shining on us. We enjoyed a feast of Spinach Parmesan Linguine with a salad which included cucumber from our very own garden! (We are so proud of that cucumber! Between the deer and the chipmunks we will be lucky to get a couple more cucumbers and a tomato or two!) To drink we had Arnold Palmer's concoction of tea and lemonade. It was just a delightful evening enjoying a yummy meal, the sun, and each other. And in case you are interested, below is the recipe! It is delicious (even if you aren't particularly fond of spinach!)! I think the recipe is from a Taste of Home Cookbook.
Spinach Parmesan Linguine
1 package linguine (16 oz)
1 cup chicken broth
1 small onion, chopped
2 garlic cloves, minced
1 pkg (10 oz) frozen chopped spinach, thawed and well drained
1/3 cup milk
2 Tbs cream cheese
salt and pepper to taste
1 cup (4oz) shredded Parmesan cheese
1/2 cup shredded mozzarella cheese
Cook the linguine according to package directions. Meanwhile, in a saucepan over medium-high heat, bring broth to a boil. Add onion and garlic. Reduce heat; cook, uncovered, for 5 minutes. Stir in spinach; cook for 2 minutes. Add milk, cream cheese, salt and pepper; stir until cheese is melted. Drain linguine and place in a serving bowl. Add sauce and toss to coat. Sprinkle with Parmesan and Mozzarella cheese; toss to coat. Enjoy on a fine summer evening with those you love!
P.S. For those with young ones: I stirred some cottage cheese into the noodles for some extra protein!

Converstations with Demani
Scene: Demani is sitting on his potty and has determined he is done sitting on the potty.
Me: Did you go potty Demani? Did you go in the potty?
D: No.
Me: Well what are you waiting for? (said jokingly) :)
D: On you.
Scene: Going down the stairs to go outside for a walk. I was just taking him all in. He's just so stinkin cute.
Me: I love you Demani. I love you buddy.
D: Jesus loves me.
Me: (surprised a bit, I was not expecting it!) Yes, Jesus loves you Demani. Does Jesus love Mommy?
D: No.
Me: Yes he does! He loves mommy too.
D: Jesus love Seren. Jesus love Mekai.
At this point I am a puddle. We went on to say that Jesus loves Daddy too!
*Mathwon got a bunch of awesome play toys at garage sales this weekend and the kids are living it up! They are just loving playing with their new toys. Demani has made us dinner several times at the play kitchen - oh and he's cooked for puppy too. They are pulling up to everything and walking along walls and furniture. Mekai will stand for several seconds without holding on to anything. Our bet is he will walk first.

Our final leg of the trip was spent in Akron with Papa and Uncle Anthony. Please see previous 2 posts for more pics of the trip!

Whew! What a great time and what a tiring time! We did it all on this trip as the pictures will attest to. The kids and I were gone from the house for almost 2 weeks! We were all glad to be back in our own space by the time we got home! I have a ton of pictures to share...bear with me...
