A perfect summer dinner

Tonight was a very enjoyable dinner. We decided to move the operation outside for a change of scenery and everyone was very appreciative of this decision. It was a beautiful evening out with a little bit of sun still shining on us. We enjoyed a feast of Spinach Parmesan Linguine with a salad which included cucumber from our very own garden! (We are so proud of that cucumber! Between the deer and the chipmunks we will be lucky to get a couple more cucumbers and a tomato or two!) To drink we had Arnold Palmer's concoction of tea and lemonade. It was just a delightful evening enjoying a yummy meal, the sun, and each other. And in case you are interested, below is the recipe! It is delicious (even if you aren't particularly fond of spinach!)! I think the recipe is from a Taste of Home Cookbook.

Spinach Parmesan Linguine

1 package linguine (16 oz)
1 cup chicken broth
1 small onion, chopped
2 garlic cloves, minced
1 pkg (10 oz) frozen chopped spinach, thawed and well drained
1/3 cup milk
2 Tbs cream cheese
salt and pepper to taste
1 cup (4oz) shredded Parmesan cheese
1/2 cup shredded mozzarella cheese

Cook the linguine according to package directions. Meanwhile, in a saucepan over medium-high heat, bring broth to a boil. Add onion and garlic. Reduce heat; cook, uncovered, for 5 minutes. Stir in spinach; cook for 2 minutes. Add milk, cream cheese, salt and pepper; stir until cheese is melted. Drain linguine and place in a serving bowl. Add sauce and toss to coat. Sprinkle with Parmesan and Mozzarella cheese; toss to coat. Enjoy on a fine summer evening with those you love!

P.S. For those with young ones: I stirred some cottage cheese into the noodles for some extra protein!
